Bill Gates-backed startup creates butter from thin air.

Carbon dioxide is usually known as a harmful gas that warms the planet. But now, scientists are turning it into something surprising food ingredients like proteins and fats. Using clean electricity and microbes, labs can reuse carbon dioxide to make useful nutrients. A California-based company called Savor, supported by Bill Gates, says it has created butter without using any dairy at all. Instead of milk, the company uses carbon dioxide from the air. Through a special thermochemical process, they turn it into fats that look, feel, and taste like real butter.

How the process worksSavor combines carbon dioxide with hydrogen and oxygen and applies heat to build fat molecules similar to those found in dairy products.
